Tomato and cockles tartar


Today's recipe is perfect for a light, healthy and easy to cook dinner, the taste will surprise you! 

Ingredients for 2 servings:
1 tomato
½ yellow pepper
1 carrot
½ onion
Juice of ½ lemon
1 can of cockles
Parsley
Salt
Olive oil
Vinegar of Modena

Recipe:
Wash the tomato, pepper and carrot.
Peel the tomato, carrot and onion.
Cut into squares the tomato, the pepper, the carrot and the onion and bring them into a large bowl.
Drain the cockles.
Add to the bowl the juice of half a lemon, the cockles, a little salt, a little parsley and stir everything well.

Place the tartar into a plate using a round metal mold and pour over a little oil and a little of balsamic vinegar.
