Red Velvet Cake in microwave

We really wanted to make this cake, since we tested several times, doing it at home is very easy!

Ingredients for a cake about 28 cm:
- 11.64 oz of Red Velvet cake mix 
- 4.39 oz of water
- 2 eggs
- 2.19 oz of oil
- 8.81 oz of spreadable cheese 
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- Neutral Frosting


Recipe:
- Mix in a large bowl the mix for Red Velvet cake, water, eggs and oil. Stir well until you have a smooth dough.
- Pour it on a silicone mold and cook in the microwave for 6 minutes at 800W power. Check that is well done clicking with a toothpick, if it comes out clean is ready.
- Cut the cake in half and place one on the plate.
- Mix the spreadable cheese, two tablespoons of sugar and vanilla extract until smooth.
- Put on the cake and distribute well. Place the other cake on top.
- Cover the top and sides of the cake with Neutral Frosting.
- Put it in the fridge for a couple of hours for the frosting harden a little.

Coq au vin

Today's recipe is inspired by this traditional French dish that has crossed our borders, we have loved to coq au vin!

Ingredients for 2 servings:
- 2 chicken breast fillets
- 1/2 onion
- 7.05 oz of whole mushrooms
- 16.9 oz of red wine
- 3.38 oz of white wine
- 1 clove garlic
- 1 bay leaf
- 1/2 tablespoon flour
- Thyme
- Olive oil
- Salt
- Pepper

Recipe:
- Cut the chicken fillets into pieces and sprinkle salt and pepper.
- In a pan with a little olive oil fry them until golden.
- Cut the onion into strips and add it to the chicken.
- Add the white wine and cook to evaporate the alcohol.
- Add the red wine and whole mushrooms.
- In a glass with a little water, pour the flour and stir well until it's well mixed with the water and add to the casserole.
- Let cook for about 30 minutes over medium heat, stirring occasionally.

Galets soup


We love this recipe so typical of Catalonia and Balearic Islands, they usually do it at Christmas, we have not tested at that time, but we like it the same!

Ingredients for 2 people (main meal):
- 5.99 oz of pasta shells (galets)
- 5.29 oz of mixed minced meat
- 31.74 oz of chicken broth
- 1/2 clove garlic
- 1 egg
- 1 tablespoon of breadcrumbs
- Black pepper
- Chopped parsley

Recipe:
- Peel and chop the garlic into small pieces.
- In a large bowl mix the minced meat with the garlic clove, the egg, a tablespoon of breadcrumbs, a little black pepper and a little parsley.
- Remove for a while until all ingredients are well mixed.
- Using a pastry gun or a pastry bag, fill the pasta shells. Note that the mass must be tight and filling galet well, if not it can leave the pasta during cooking.
- When you have almost all filled, put to heat the chicken broth.
- By the time it begins to boil, introduce with a spatula the galets slowly and let cook for 15 minutes or so until they are ready.

Zucchini and ham pudding in microwave

This pudding is very easy and quick to make, perfect when you have guests at home as it can prepare in advance and serve at room temperature. We love it!

Ingredients for 1 single serving:
- 7.05 oz of zucchini
- 1 egg
- 1/2 clove garlic
- 1 and a half slices of ham 
- Olive oil
- Chopped parsley
- Salt
- Black pepper

Recipe:
- Wash, peel the zucchini and cut into thin slices.
- Cut the garlic into small pieces.
- In a pan with a few drops of olive oil, fry the garlic until almost golden.
- Add the zucchini and cook until it is tender, stirring occasionally.
- Sprinkle a little salt, black pepper and chopped parsley.
- In a vessel suitable for mixer, beat all ingredients until they have a pureed texture.
- Add the egg and mix well until blended into the mash.
- Cut the ham into small pieces and mix again.
- Pour into an individual silicone mold and cook at 600W for 5 minutes in the microwave.
- Check with a toothpick that the pudding is done, if it lacks a bit again put it in the microwave and check every 30 seconds if it's done.
- Leave a few minutes and unmold.

Chicken ras-el-hanout with vegetables

Long ago we bought a bottle of ras-el-hanout, a spice we bought on our last trip to Morocco, where is very popular. In Spain it is also easy to find, so you should try this dish, it tastes soft and delicious.

Ingredients for 2 servings:
- 2 chicken breasts
- 5.29 oz of mushrooms
- 1/3 red pepper
- 1 teaspoon and a half of ras-el-hanout
- 2 cloves garlic
- Olive oil
- Salt

Recipe:
*Prepare the chicken marinade for at least 2 hours before to pick the flavor.
- Cut the chicken breasts into pieces and place in a large bowl.
- Peel the garlic cloves and add to the chicken.
- Cover the chicken with olive oil and sprinkle 1 and a half teaspoons of ras-el-hanout and mix well.
- Let it in the fridge for at least 2 hours, stirring occasionally.
- Wash red pepper and mushrooms and cut into strips.
- In a skillet with a little olive oil, fry the vegetables until soft.
- Add the marinated chicken and fry well with a little oil you used for the marinade until golden.

Carrot and nuts mug cake

Today we return with another delicious mug cake, if you have never tried these cupcakes Tan and easy and fast to make in the microwave I recommend it, it is a vice!

Ingredients:
- 2 tablespoons of soft olive oil 
- 2 tablespoons of brown sugar
- 1 large egg
- 1 tablespoon of milk
- 1/2 teaspoon of vanilla flavoring
- 4 tablespoons of flour
- 1/2 teaspoon of baking powder
- 1 pinch of salt
- 1/3 teaspoon of ground cinnamon
- 2 tablespoons of grated carrot
- 1 tablespoon of chopped walnuts
- Whipped cream for garnish (optional)


Recipe:
- In a bowl mix the oil, brown sugar, egg, milk and vanilla. Stir well using a whisk or spoon.
- Add the flour, baking powder, salt and cinnamon and stir again until you have a uniform mixture without lumps.
- Using a mortar, undo the nuts until they are finely chopped.
- Wash, peel and grate the carrots very fine and add to the mixture along with nuts.
- Again stir well to mix everything and fill the cup where you go to make your mug cake halfway.
- Cook it in the microwave for 1 minute and a half to 800W power.
- Garnish with a bit of whipped cream.

Leek and pork fillets risotto


You know that I love risotto, it's very versatile and support any ingredient. Dare to try!

Ingredients for 2 servings:
- 5.29 oz of rice pump
- 4 pork fillets
- 1 leek
- 3 cups of vegetable broth
- White wine
- Salt
- Black pepper
- Grated Emmental cheese

Recipe:
- Wash and cut leek into slices and cut into stripes the pork fillets.
- In a pan with a little oil, fry both over medium heat.
- When they're done, add the rice and stir for 2-3 minutes.
- Pour the broth and a splash of white wine.
- Add a pinch of salt and pepper.
- Stir well occasionally and cook for about 20 minutes.
- When the broth has evaporated almost completely, add some grated Emmental cheese and stir to mix well with rice.

Homemade pizza in a pan


Yes, we have made this yummy pizza in pan, as we have no oven, we have discover this way to make homemade pizza whenever we want ;-)

Ingredients 1 medium pizza:

For the dough:
- 3.52 oz of water
- 1.76 oz of wheat flour
- 3.52 oz of wheat semolina flour
- 1 teaspoon of salt
- 0.52 oz of fresh yeast
- 0.52 oz of olive oil

For the filling:
- Fried tomato
- Grated Mozzarella
- 1 can of tuna
- 1/3 of onion
- Oregano

Recipe:
- Mix in a bowl the flour, semolina flour and salt.
- Add water and oil and stir well.
- In another bowl with some water, crumble the yeast and stir with a spoon until it dissolves.
- Once undone, mix it with the dough you got in the first bowl and start kneading for a while until the surface of the dough is smooth and it doesn't stick to your hands. (Crush and stretch the dough with the base of your hand, fold in half and repeat. Occasionally, sprinkle a little flour on the table so that the dough does not stick).
- Once the dough is smooth, make a ball and put it in a bowl on before you have sprinkled a little flour and cover with plastic wrap. Let stand about 3 hours.
- Meanwhile, chop the onion into small cubes and fry until golden. Reserve.
- Then sprinkle a little flour on the table, take the dough and work it a few minutes, stretch it with a rolling pin and give the rounded shape adapted to the pan where you are going to do it.
- Pour a few drops of olive oil on the pan and heat over high heat.
- When the oil is hot, reduce heat by half and place the pizza base, leaving a few minutes until you see that the base is browning.
- Using a spatula and a dish, turn it to the base and start putting on the side that is already golden fried tomato, mozzarella, tuna and the fried onion.
- Make sure the bottom of the pizza is golden and put it out with a spatula and plate.
