Today we propose this light dessert to succeed on Valentine's Day, it is very fluffy and with the touch of coffee it's delicious.
Ingredients for 2 servings:
- 6 tablespoons of sugar
- 1 oz of milk
- 1 oz of coffee
- 2 eggs
- 2 sheets of neutral gelatin
- 1 teaspoon of cornstarch
- 2 tablespoons of icing sugar
- 7 oz of liquid cream to assemble
- Sprinkles of hearts
Recipe:
- In a bowl with cold water, hydrate the gelatin for 5 minutes.
- Separate the whites from the egg yolks.
- Assemble the cream very cold together with the icing sugar with the blender and the accessory of the rods. Once assembled, reserve in the fridge.
- Put the 6 tablespoons of sugar in a saucepan with a splash of water and heat over medium heat until the caramel is formed. Mix often.
- Heat the milk in the microwave.
- Add it little by little to the caramel while stirring so that the caramel dissolves well in the milk.
- In a bowl, beat the yolks along with the cornstarch.
- Add them to the caramel and mix well while cooking on medium heat until thick.
- Remove from heat, add the drained gelatin and mix well until it dissolves.
- Cool it at room temperature.
- When the caramel has cooled, mix it with the whipped cream with enveloping movements.
- Place the mousse in glasses and let stand in the fridge for an hour.
- Decorate with sprinkles of hearts on top.
