Chicken with coffee and onions


Today we present this easy and quick recipe that you can carry in a tupper to work, because with the sauce, the chicken is very juicy. You can also try it with thighs instead of breast, the only difference is that it takes a little longer to cook, but it is just as good!

Ingredients for 2 people:
- 2 chicken breasts
- 1 onion and a half
- 2 carrots
- 4 tablespoons of coffee
- 3.5 oz of chicken broth
- Olive oil
- Salt


Recipe:
- Cut chicken breasts into dices.
- Wash, peel the carrot and cut it into thin slices.
- Peel the onion and cut it into strips.
- In a pan with a drizzle of olive oil, fry the chicken round and round, since it will end with the sauce. Reserve it
- In the same pan where you have cooked the chicken, simmer the onion and carrot until they soften.
- Pour the chicken broth and the coffee and let it simmer until the sauce has reduced.
- Add the chicken and leave it for 5 more minutes so that it's cooked inside and mix well with the vegetables and the sauce.
