Watermelon gazpacho


This recipe is perfect to refresh and have something light as a starter or first course. 

Ingredients for 2 servings:
- 10.58 oz of tomatoes
- 8.81 iz of watermelon (without skin)
- 0.7 oz of onion
- 0.7 oz of green pepper
- 1/2 clove garlic
- A dash of olive oil
- A dash of vinegar
- Salt

Recipe:
- Wash the tomatoes and peppers and cut into several pieces to make it easier to blender.
- Peel the onion and cut it into several pieces.
- Peel the garlic.
- Add these ingredients in a blender glass and beat them well.
- Strain the gazpacho through a sieve and put it back into the glass for blender.
- Peel the watermelon, try to remove all the seeds you can and cut it into several pieces.
- Add the watermelon in the glass for blender, add a little salt, a little oil and vinegar and beat until you have an homogeneous cream.
- Make a watermelon ball to decorate the bowl or plate where you are going to serve the gazpacho.

*Tip: introduce the gazpacho in the fridge a few minutes before serving to make it cooler.
