Cod with pil pil sauce


Today we bring you a classic recipe from our country that we love, surely many of you prepare it at home. For those who have not yet done so, we leave you the recipe, but don't forget to tell us later how it has come out!

Ingredients for 2 people:
- 2 loins of salted cod about 2 cm thick
- 1 clove of garlic
- 1 cayenne
- Olive oil
- Salt
- Chopped parsley

Recipe:
- Peel and slice the garlic.
- In a large saucepan, fry the garlic and cayenne in plenty of olive oil until golden.
- Remove them from the oil, since we only want it to catch the taste of them.
- Insert the cod loins with the skin up and let it cook over medium heat.
- After about 5 minutes you will see that the fish is releasing its gelatin (it is like fine foam), move the pan from time to time to facilitate this process.
- When you have released enough gelatine on that side, we turn the fish and put the skin down to repeat the process.
- Remove the cod and reserve.
- Turn off the heat and let the oil a little temper.
- Remove the oil and gelatin for 3-4 minutes with the aid of a strainer to help emulsify more quickly until a textured yellow sauce is formed.
- Serve the cod and pour the sauce over.

Vegetarian fajitas

Today's recipe is vegetarian, so it helps us take care of ourselves, and it's perfect for a light and healthy meal.

Ingredients for 2 servings:
- 2 wheat leaves
- 2.8 oz of black beans
- 1.8 oz of brown rice
- 1/2 ripe avocado
- Lettuce 
- 3 tablespoons of mayonnaise
- 1 tablespoon of mustard
- Half lemon juice

Recipe:
- Cook the beans in salted boiling water until they are soft.
- In another pot, also cook the brown rice until it is at its point (about 20 minutes).
- Drain beans and rice well and set aside.
- Mix the mayonnaise with the mustard until you form a cream.
- Spread the wheat leaves, place in the middle a few leaves of lettuce, a spoonful of beans and another of brown rice.
- Cut the avocado into strips, pour over the lemon juice to avoid rust and distribute it on the two leaves of wheat.
- Add a spoonful of sauce on top.
- Roll the fajitass and hold them with a toothpick.

Timbal of lentils and cod


Today we bring you the recipe of a warm salad, sure it will surprise you with the combination of lentils with the brandada of cod, but we assure you that it looks great!

Ingredients for 2 servings:
- 2.8 oz of lentils
- 1/4 red pepper
- 3.5 oz of desalted cod
- 1 medium potato
- 1.8 oz of cream
- 1 clove of garlic
- Chopped parsley
- Olive oil

Recipe:
- Wash the pepper and cut into small pieces.
- Cook the lentils in a saucepan with boiling water and a pinch of salt.
- When cooked, drain and reserve.
- Wash and cook the potato in salted water until soft. Peel and reserve.
- Put the garlic in small pieces and place in a frying pan with olive oil.
- When browned, add potato cut into pieces and flatten with a fork while stirring continuously.
- Pour the cream and continue stirring until all is well mixed.
- Add the cod, fry and stir again until it is incorporated into the potato and the cream.
- Sprinkle some chopped parsley over and stir again.
- Mix the lentils with the red pepper and pour a dash of olive oil.
- Use a metal ring to serve, first the lentils with the pepper and, later, the brandada of cod.

Octopus with vinaigrette

Today's recipe is a modern version of the classic octopus spit, shaped like a timbale. What do you think?

Ingredients for 2 servings:
- 1 leg of cooked octopus
- 1/4 green pepper
- 1/4 onion
- 4 crab sticks
- 5 mussels
- 1/2 clove of garlic
- Sweet paprika
- Olive oil
- Salt

Recipe:
- In a chopper, chop the octopus, the pepper, the onion, the crab sticks, the mussels and the garlic into very small pieces.
- Pour it over a medium source.
- Sprinkle a little paprika and salt.
- Pour in a splash of olive oil.
- Remove everything well and serve with a metal ring.

Fabada


Today we travel to Asturias to taste this delicious fabada, that although it is not made with the typical fabes of the zone, with white beans the result is more than acceptable. 

Ingredients for 2 servings:
- 7 oz of white beans 
- Compango with: chorizo, black pudding, bacon.
- 1 bone of ham
- 1 potato
- 1 onion
- 2 bay leaves
- 1 packet of ground saffron
- Salt
- Water

Recipe:
- Leave the beans overnight to soak in cold water for about 12 hours.
- Use a fork to prick the chorizo and black pudding so they do not open during cooking.
- Wash and peel the potato.
- Peel the onion.
- In a large pot, put the beans in the soaking water and pour more water until it covers about two fingers above the beans.
- Also place the whole potato and onion, without breaking.
- Heat over high heat until it begins to boil.
- At that time, add the chorizo, black pudding, bacon and ham bone.
- Let cook on high heat for 30 minutes.
- Sprinkle the content of the saffron envelope and stir slightly.
- Slowly cook the fabada at low temperature for about 3 hours, stirring occasionally very carefully to not undone the beans.
- During this cooking time you will have to "frighten" the beans twice, pouring a glass of cold water each time so they don't crack.
- When it takes two hours of cooking, carefully remove the potato, onion and a spoonful of beans and beat with the blender until puree.

- Return it to the pot slowly while stirring so that the broth becomes thicker.
- Try the beans and when they are soft, remove them from the fire and let them stand for a few minutes.
- Remove the bay leaves and serve very hot.

Coffee Frappuccino

Today we want to share with you the recipe of this famous drink from Starbucks coffee shops, which we love!

Ingredients:
- 2 tablespoons of coffee 50-50 lot of Coffee Record
- 4.3 oz of semi-skimmed milk
- 2 tablespoons of sugar
- 6 ice cubes
- Whipped cream
- Cinnamon powder

Recipe:
- In a glass suitable for the blender, put the milk, sugar, coffee and ice and beat until the cream has a frozen and thick texture.
- Serve in a tall glass and top with the whipped cream.
- Sprinkle over a little cinnamon or, if you prefer, grated chocolate or strawberry syrup, caramel...

Pork tenderloin with coffee


Today we present this recipe that we have prepared with the coffee, what other recipes with coffee you can think of?

Ingredients for 2 servings:
- 1 pork tenderloin
- Coffee ground 
- 2 cloves of garlic 
- 1 cinnamon stick
- The peel of a lemon
- 1/2 cup of vinegar
- Salt
- Pepper
- Soy sauce
- Olive oil
- Sea salt

Recipe:
- Clean the pork tenderloin removing the outer fat.
- In a large bowl, place the whole tenderloin together with the two crushed cloves of garlic, the cinnamon stick, the peel of a lemon, a little salt, a little pepper, a glass of vinegar and a good stream of soy sauce.
- Fry well in the sauce and let it rest in the fridge for 30 minutes, covered with transparent film.
- Take it out of the fridge, turn the tenderloin and return it to the fridge another 30 minutes to make it well.
- Remove it from the fridge and drain well.
- Put ground coffee on a plate and pass the tenderloin so that the outside is covered in coffee.
- In a large skillet with a dash of olive oil, fry the tenderloin until it is browned all over.
- Let it cool and then cut into slices.
- Serve and sprinkle over sea salt scales.
- If you want, you can also add a splash of olive oil on top to accompany.
