Bimi sautéed with soy sauce


The bimi is a vegetable that we discovered a few months ago and it has become essential in our house. It has a lot of properties and nutrients (calcium, zinc, vitamin C, folic acid, antioxidants ...) and best of all is that it is delicious.

Ingredients for 2 servings:
- 7 oz of bimi
- 3 tablespoons of soy sauce
- 2 cloves of garlic
- 1 tablespoon of olive oil

Recipe:
- Wash the bimi well and remove the leaves from the stem.
- Peel the cloves of garlic and cut them into thin slices.
- In a pan with a tablespoon of olive oil, sauté the garlic until golden.
- Add the bimi and sauté 5 minutes, turning the stems so that they cook well everywhere.
- Pour the soy sauce and sauté everything together so that it mixes well with the bimi until almost all the sauce evaporates.

Steamed salmon skewer with mango


Today we wanted to prepare a very original recipe with salmon, cooking it on this skewer along with mango, so the sweet-salty contrast of both ingredients makes it a spectacular dish.

Ingredients for 2 servings:
- 1 large salmon tenderloin
- 1 handle
- Chopped parsley
- Olive oil
- Juice of half a lemon

Recipe:
- Thoroughly clean the salmon loin, removing the skin and bones.
- Cut it into squares and place it in a bowl.
- Add lemon juice, chopped parsley and a pinch of salt.
- Mix the ingredients well and let it macerate half an hour in the fridge.
- Wash the mango, peel it and cut it into small squares.
- Insert the squares of salmon into small sticks for skewers, alternating them with those of mango.
- In a pan with a few drops of olive oil, simmer the skewers, with the lid on, so that they are steamed.
