We love legumes, and although we usually prepare them in the form of stew, sometimes, especially in summer, they want a lighter and fresher form, which is why we are addicted to eating them in salads. What do you think of our proposal for today?
Ingredients for 2 servings:
- 3.5 oz of white beans
- 2 cans of tuna in natural
- 15 cherry tomatoes
- 1/2 cucumber
- 1/3 of green pepper
- Black olives
- Green olives
- Chopped parsley
- Salt
- Olive oil
Recipe:
- Soak the white beans the night before.
- The next day, cook them in boiling water with a little salt until they are soft.
- Wash the cucumber, tomatoes and green pepper.
- Cut the pepper into small strips, the cucumber into squares and the cherry tomatoes into 4 wedges.
- In a pan with olive oil, sauté the green pepper over medium heat until golden.
- Place it on absorbent paper to remove the excess of oil and reserve.
- Drain the tuna.
- Mix in a bowl the white beans, green pepper, cucumber, cherry tomatoes, tuna and green and black olives.
- Sprinkle a little chopped parsley and salt over the top.
- Pour a drizzle of olive oil over it and stir again.
